European Gastronomy Congress in Krakow
The European Gastronomy Congress "Food & Art & Technology" will be held at ICE Kraków on October 25.
The leitmotif of the European Gastronomy Congress, which will be held on October 25 in Krakow, will be the "brain perception" of taste, culinary art, gastronomic tourism and new technologies in nutrition. The main points of the program are three thematic panels and an introductory lecture. As part of the inaugural lecture entitled, "Brain and taste" by professor Charles Spence from the University of Oxford will talk about how much we can influence the perception of taste.
The first panel entitled "Art on a Plate" will include the participation of chefs awarded a total of 18 Michelin stars (such as M. Berasategui, E. Arzak, P. Pérez, J. L. Fernández, W. M. Amaro). Speakers will focus on gastronomy as the art of creating new dishes and setting trends.
The next panel - "Gastronomy culture as a new destination" - will be devoted to the relationship between recognition in rankings and the dynamics of the gastronomy development of the region. The authorities of the tourism industry will also talk about the Michelin guide and its impact on the shape of the industry.
In terms of substance, the Congress will finish with the panel "Technology in nutrition - where are we heading?", in which experts will indicate development directions and trends in the field of alternative world development systems. Among other things, global climate changes, vegetable meat substitutes, biodegradable dishes, "clean" food production technologies, new consumption habits and their impact on the gastronomy market will be discussed.
The event will end with a Gala Dinner at the Szara Gęś restaurant, thanks to which participants will have the opportunity to go from theory to practical gastronomic experience. The full congress program can be found on the website.
Considering the cultural aspect of the event and the fact that it takes place in Krakow - the organizers of the European Capital of Gastronomy Culture in 2019 decided to send free invitations to participants of the European Gastronomy Congress as well as residents and tourists to a classical music concert (organ performance with orchestral accompaniment), which will take place on October 24 at 8:00 pm in the Saints Peter and Paul Church at ul. Grodzka 52a. The concert program will include compositions by Chopin, Surzyński, Bach, Vivaldi, Dvorak and Mozart. Forty free, single tickets can be collected from Tuesday (October 22) from 9:00 am at the InfoKraków point in the Wyspiański Pavilion, ul. Wszystkich Świętych 2.
The organizer of the congress is the European Academy of Gastronomy, a strategic partner of Krakow City. Mazurkas Congress & Conference Management is responsible for the implementation and logistics of the event. The event will take place at the ICE Krakow Congress Center. The Congress is an element of the European Capital of Gastronomy Culture 2019.
